What was served and how did the food of the Aztec Empire influence the cuisine today?

Before the Conquistadors arrived, the Aztecs ate a lot of corn, beans, and squash. It was ideal for growing tomatoes and avocados (whose name comes from the Aztec for testicle, if you can believe it). Sweet potatoes were the most popular due to their versatility. Of course, there are also chillies. The Spanish introduced beef, lamb and dairy products. The Aztecs did not welcome these foods and, even after being enslaved, they were reluctant to introduce them.

Even with the introductions of wheat and rice, corn is still the staple food. Fresh corn is also available, but the most popular use of dried corn is to make masa. Tortillas are most commonly found in chips, curved forms like nachos, or larger tacos.
